We chop the sausage into slices. Then we fry it with the pancetta until it is golden brown and set it aside. Beat the eggs until they are diluted a little, then add them to all the other ingredients, adjusting the amount of salt and pepper. Let’s cook them in a pan for a while, until both sides are golden.

When it is time to turn the omelette upside down, we can help each other with a plate, to prevent it from falling apart. Once it has been turned over, all that remains is to wait a few minutes for the other side to brown as well.
